Ginger should be harvested during December when the leaves are dried.

In the month of December, when ginger leaves and shoots die back, then the crop is ready to harvest. It should be harvested carefully with the help of digging forks without damaging the underground rhizomes. Because the injured rhizomes are susceptible to damage during storage and thus do not fetch good value in the market. If the rhizome is to be used for the next crop, then it should be harvested in the last week of February. During this time, excess water should not stand in the field. Otherwise rhizomes will be damaged.
